how to tune a 650 edelbrock mounted on a 383 stroker?

I hit a 383 stroker on a 72 chevy nova, it is a crate locomote from Jegs, the locomote came with a 750 edelbrock so i place a 650 edelbrock on it, the car takes off really good and modify smoke the tires but when I verify off in fisrt gear and let the RPM go rattling broad when I agitate to ordinal with the tone to the metal the locomote just looses all the power and force and tries to dillydally until I let soured the gas for a some seconds and let the RPMs go down, what could be causing this? could it be that the engine is starving from render due to the 650 too small of a carb for the motror? or could it be that is not effort enough current from the provider at broad RPM, or the timming is off?
